This is a Brut traditional method sparkling wine. We fermented the wine to dryness then racked the wine twice. After several months we restarted the fermentation added enough sugar to create 6 atmospheres of pressure and bottled the wine. Secondary fermentation lasted 5-6 weeks followed by 18 months of aging on the lees (yeasts). We eliminated the sediments by disgorging the wine and adding 15mL of our fortified wine to complete the bottles.
