Cuvée Éliane 2017
70% Frontenac Blanc, 30 % Frontenac Gris all estate grown grapes
We created this wine for the first time in 2012 and has been one of our signature wines ever since. This white wine had a beautiful balance between alcohol, acidity and sweetness. After about 1/3 of alcoholic fermentation we added alcohol to fortify the wine to 17% and thus stopping the fermentation as the yeasts can’t survive at such a high level of alcohol. The wine is then racked followed by 12 months in a neutral French oak barrel and then bottled.
A rich nose of honey makes way to more honey, some pineapple, pears and a touch of maple syrup on the palate.
Recommended with strong cheeses (old cheddar, blue) before a meal or with desserts (vanilla ice cream with a fruit salad).
375mL 17% alc. vol. 60g of residual sugar per bottle
Cuvée Marianne 2016
50% Frontenac Noir (Estate) 30% Cabernet Franc (Niagara) 20% Merlot (Niagara)
This fortified red wine is made in the same technique as the Port wines of Portugal. We select the Frontenac Noir with the highest possible sugar concentration and harvest them last. After about ½ of the alcoholic fermentation we added alcohol to fortify the wine to 20% and thus stopping the fermentation as the yeasts can’t survive at such a high level of alcohol. The wine is then racked followed by 3 years in neutral French oak barrels and then bottled. The wine is aged another 12 months in bottle before finally being released.
We find Cherries and plum compote on the nose with dark cherries, blueberries and dried dates on the palate.
